Jhatka is the meat from an animal killed instantly in which an animal's head is severed in a single blow and the animal dies instantly. This means in the jhatka form of slaughter, the link between the spinal cord and brain is instantly cut and the animal loses consciousness immediately.

The word "jhatka" means ‘instantly, quickly, at once. Besides, the underlying intention is to kill the animal with minimum torture in this type of method.

Here, an animal must not be scared or shaken before the slaughter. This type of slaughter is preferred mostly by Sikhs as well as meat-consuming Buddhists, Hindus, and some khatiks
 
The Council of Meat Research has come up with certification in Jhatka Meat for the first time across the world. There is Jhatka Certification Authority led by Ravi Ranjan Singh. He initiated the Jhatka movement in 2007
 
Economically, the potential Indian jhatka meat market has recently increased. A 2018 study by Balamurali Natrajan and Suraj Jacob published in the Economic and Political Weekly showed more than 80% of Indians or around 900 million people were meat eaters. It quoted the National Sample Survey organization (NSSO) to estimate that 58% of Hindus, 93% Christians, 21% Sikhs and 78% of Buddhists had meat. They are the domestic target audience.
